Cowles is an ash-ripened, dense square. We release it younger than any of our other cheeses – it comes out of the cave at around three weeks – so it maintains a cakey center of more chevre-like consistency, surrounded by softer and more supple paste.
Cowles cuts very well and can be portioned easily for salads or cheese boards. One of our most restaurant-friendly cheeses, it has been featured on the menus at Blue Hill, Batard and Union Square Cafe. Usually 9 oz.
Tasting notes: tangy, light, fresh grass, cold milk.
