Malloy is the washed-rind sister cheese of Briéba, and the reigning ACS champion for best 30-60 day old goat cheese in America! Rebecca begins washing the young cheeses with a B. linnens and annatto brine at three weeks, and releases them at around six weeks old with a delicate, rosy-yellow rind.
This is American-style farmstead cheesemaking at its best: lots of flavor, milk from animals fed outside on pasture, hand cut, ultra-small batch, cave affinaged. Malloy embodies new-wave traditionalism!
Some yeastiness, with notes of salted caramel and cured meat. They are typically 10 oz.
