Malloy is the washed-rind sister cheese of Briéba, and the reigning ACS champion for best 30-60 day old goat cheese in America! Rebecca begins washing the young cheeses with a B. linnens and annatto brine at three weeks, and releases them at around six weeks old with a delicate, rosy-yellow rind.
This is American-style farmstead cheesemaking at its best: lots of flavor, milk from animals fed outside on pasture, hand cut, ultra-small batch, cave affinaged. Malloy embodies new-wave traditionalism!
Some yeastiness, with notes of salted caramel and cured meat. They are typically 10 oz.
Note: our cheese is picked up on Wednesdays. Any orders placed after 10pm on Tuesday will be included in the following week’s order.
Due to variability in the size of our wheels and cut pieces, these prices are estimates. Our invoice may reflect a different price than what is listed on this website due to weight variations. Our per pound price is accurate.
