Babette's Table is a small, woman owned, family-run business that sources our pork from local, family farms. We work with our farmers closely and know them well. We make all our products in house in Waitsfield, Vermont, using slow fermentation methods and small batches, and drawing on techniques Erika, Babette's Table's owner, learned when she apprenticed with a master butcher in Gascony, France.
